Whisk eggs, milk and sour cream together until frothy.
Add flour bit at a time and keep beating until smooth.
If you need either more liquid or more flour, add at this point.
Consistency should be like a runny custard.
Spray pan and heat until smoking.
Using 1/4 cup measure, (see the cute ones I found today?) Reversible Measuring Cups Set, pour batter into pan and swirl around until spread evenly.
Cook until it releases itself from the pan. (This is where a good pan is important!)
Flip and cook very quickly on other side. SERVE!
