Not going to lie. This is awesome and should possibly have been included in Merry Christmix; A Collection of Festive Recipes 2013, but seriously. Who can wait that long? SO instead you get it for free just by being subscribed to the blog…how does that feel?? Like a Merry Christmix I am sure. As part of my lead up to Christmas this year, I have earmarked a few recipes and this is just perfect for gifting, eating, sharing and caring…so it made the cut. Totally easy and quick. Gotta love that.

It WILL be Christmas day in the blink of pixel, so get onto it. Leave notes taped to his computer screen, make a whole Pinterest board about what you want and send him the link, stop cooking dinners completely because you ‘need’ inspiration and the only inspiration comes in the form of; ….Fill in the blankety blank blank….Channel your inner Jingle Bells, and get ready.

Need

  • 500 Grams chocolate white, in pieces BUY
  • 50 Grams coconut oil BUY
  • 2 Teaspoons vanilla bean paste BUY
  • 1 Handful dried paw paw, diced
  • 1 Handful dried pineapple, diced
  • 1 Handful dried mango, diced
  • 1 Handful macadamia nuts, roasted and salted
  • Shredded coconut as needed
  • 4 - 10 white marshmallows, cubed (this will depend on the size of the marshmallows you buy)

Cut a piece of baking paper so that it fits the length of a loaf tin exactly. Leave lots of overhang on the sides so you can remove the rocky road easily.

Place chocolate, coconut oil and vanilla into Thermomix bowl and melt 10 min/50ºC/speed 2. Scrape down sides of bowl if necessary.

Spread a little of the chocolate in the prepared tin to form a base. Stud with fruits and nuts and coconut. Flick more of the melted chocolate over, so that it glues the fruit to the base.

Place the marshmallows over the top of this, add more chocolate, more fruit, nuts and coconut finishing with chocolate and some shredded coconut.

Set in fridge for a few hours. Remove before cutting with a very sharp knife into shapes that will fit into gift boxes of choice or into squares. Store in fridge.
