White Chocolate Minty Truffles

No I'm not pregnant….(been there, done that!) but I have been craving chocolate mint truffles…as usual, needed to shake it up a bit…so this is my version with white chocolate and vanilla sugar. DIVINE….not great for the new swimsuits that just arrived for the summer weather that is upon us already in my part of the world…I am Cruise ship bound early in the New Year and with that in mind, there may be a few more salads and low calorie items showing up on here; but sorry, today was not one of those days! Need

  • 380 Grams chocolate melts white BUY
  • 100 Grams cream
  • 1 Handful mint leaves
  • 1 Teaspoon Creme de menthe or peppermint oil
  • 1 vanilla bean (dried in 140ºC oven for 1 hour)
  • 200 Grams white sugar

Do

Place chocolate, cream and mint into Thermomix bowl and melt 10 min/50ºC/speed 1.

Remove mint leaves and add mint oil.

Blend 1 min/speed 6.

Scrape out into glass bowl and cover with plastic wrap pushed down onto the surface of the mixture. Chill for at least 4 hours or until holding a shape when scooped.

Place vanilla bean and sugar into clean, dry Thermomix bowl and mill 1 min/speed 10.

Roll spoonfuls of the truffe mix into small balls and roll in sugar until well coated. Keep in fridge until use

You will have sugar left over, but keep it for another occasion when you would like to add a little vanilla kick to your flavours. It will store indefinitely in an airtight jar.
