Yellow Rice with Black Beans

Serves 4-6 Prep Time 40 minutes   Cook Time 25 minutes   Rated:

A delicious little side dish of rice never goes astray on a weeknight and this is fresh and quick and easy to prepare. The kids will even love it, we are sure. So don't settle for ordinary steamed rice, go yellow! A little Caribbean, maybe Jamaican, may Hawaiian. Let's just say Pacific Rim Rice! But it still pairs well with a mild or sweet curry.

Serve it with any or all of the following suggestions:

Jerk Pork and Black Bean Tostadas with Mango Avocado Salsa

Pulled Pork Quesadillas

Jerk Chicken

Hawaiian Orange Chicken

Spicy Prawn Curry

Sri Lankan Pumpkin Curry

Place 1 litre of water in the Thermomix bowl. Place rice in the basket and top with saffron and turmeric. Give it a little stir. Steam 15 min/100°C/speed 4 with spatter guard in place.

Pour rice into Thermoserver, with beans, garlic, onion, chilli and salt. Stir to combine. Drizzle with a little EVOO just prior to serving.
