Tenina.com's Cheesy Corn Casserole

Do

  1. Preheat oven to 180°C and butter a square casserole/serving dish. Set aside.

  2. Thaw the corn kernels in the package.

  3. Place all the cheeses into the Thermomix bowl and mill 10 sec/speed 10. Remove from bowl and set aside.

  4. Without cleaning the bowl, add the garlic, onion and butter and chop 3 sec/speed 5.

  5. Saute 5 min/Varoma/speed 1/MC off.

  6. Add cream and blend 3 sec/speed 5.

  7. Arrange half the corn in the base of the casserole dish and pour a little of the cream and cheese mixture over. Give it a stir and add a few leafy herbs, seasoning and some of the jalapenos if using.

  8. Repeat. Finish with panko breadcrumbs and finally the last amount of cheese and a few more jalapenos.

  9. Bake until bubbling, around 40 minutes, serve topped with sliced fresh spring onions. This is easy to heat up again and really improves with age...like me!
