Tenina.com's Chewy Oatmeal Cookies



  1. Preheat oven to 160°C. Line 4 trays with baking paper.

  2. Place coconut into the Thermomix bowl. Mill 10 sec/speed 10. Scrape bowl and lid and repeat. Set aside.

  3. Place maple syrup, black molasses and butter into the Thermomix bowl and melt 5 min/90°C/speed 1.

  4. Add remaining ingredients including coconut and blend 10 sec/speed 5.

  5. Tip dough out onto a floured silpat mat. Shape into a log and refrigerate for 1 hour.

  6. Roll into walnut sized balls and place on prepared trays. Leaving space between as they will spread.

  7. Bake 6 minutes, turn trays and bake a further 4-6 minutes. Cookies will harden when cool.

  8. Leave on the trays as they cool on a rack. Store in airtight container.
