Tenina.com's Fermented Tomato Sauce (Ketchup)

Need

1/2 red onion (about 55-60g)
1 cloves garlic
20 Gram Extra Virgin Olive Oil (EVOO)
400 Gram tomato paste
80 Gram honey
1 Teaspoon smoked paprika
50 Gram apple cider vinegar
1 Teaspoon pink salt flakes
60 Gram whey Recipe

Do

Place onion, garlic and EVOO into TM bowl and chop 3 sec/speed 5.
Sauté 5 min/Varoma/speed 1.
Add remaining ingredients and blend 20 sec/speed 8.
Decant into a bottle and add a little more whey onto the top of the sauce. Allow to sit at room temperature for 2-3 days.
Stir in the whey and refrigerate. This will keep for 3 months in the fridge and is completely delicious on everything, except ice cream, naturally.
