Tenina.com's Pineapple Margarita



  1. Dip 2 glasses in lime juice, then in salt flakes. Reserve remaining lime juice.

  2. In a shaker, combine ice, pineapple juice, lime juice and the Lyre's spirits. Shake shake shake!

  3. Pour into the salt rimmed glasses.

  4. To make the meringue, Place egg whites into a very clean and dry Thermomix bowl with another pinch of salt flakes and whip 4 min/37°C/Butterfly/speed 3/MC off.

  5. Wipe off moisture from lid and top portion of the bowl with paper towel as necessary.

  6. Slowly add the sugar through the hole in lid 6 min/Butterfly/speed 3/MC off.

  7. Place a tablespoon of meringue on top of each cocktail.

  8. Remaining meringue can be piped onto trays and baked at 100°C for 45 minutes.
