Tenina.com's Potato Latkes



  1. Place half of the potatoes into the Thermomix bowl and chop 3 sec/speed 5. Tip out into a large bowl. Add remaining potatoes and chop 3 sec/speed 5. Add to the bowl.

  2. Rinse chopped potatoes in cold water and pat dry on sheets of paper towel.

  3. Place onion into the Thermomix bowl and chop 2 sec/speed 7. Tip out onto paper towel and pat dry. Add to the potatoes.

  4. Add egg, salt and flour to the potato and onion and stir to combine.

  5. Preheat a pan to medium heat with a splash of EVOO.

  6. Place a heaped tablespoon of the mixture into the hot oil, pressing down to flatten. Cook a couple minutes each side, or until browned.

  7. Serve with smashed avocado, Parmesan Cream and sliced chillies to garnish. A poached egg is also amazing on these, or crispy bacon!
