Do

  1. Place leek and EVOO into the Thermomix bowl. Chop 4 sec/speed 6. Sauté 20 min/Varoma/speed 1. Set aside.

  2. Place coriander, walnuts, garlic, ground coriander, chilli flakes and EVOO into the Thermomix bowl. Chop 6 sec/speed 8. Scrape and repeat twice.

  3. Add cooked leek, olives and mint. Combine 10 sec/speed 4. Scrape into a serving dish.

  4. Garnish with mint and coriander leaves and pomegranate arils. Drizzle with some walnut oil.

  5. Serve with crostini or crackers and extra walnuts on the side.
