In a frying pan over medium heat, cook bacon until rendered but not quite crispy. Drain away the fat where possible. Set aside.
Place chilli, garlic, onion, sun dried tomatoes and chipotle chilli into the Thermomix bowl. Chop 3 sec/speed 6.
Add sugar and vinegar and cook 10 min/Varoma/Reverse/speed soft.
Add remaining ingredients, including cooked bacon, but except Bourbon, and cook 1 hour/Varoma/Reverse/speed soft.
Add bourbon and stir through.
Pour bacon jam into sterlised jars and top with an additional teaspoon of bourbon.
Seal and store in the fridge until use.
