Place cinnamon stick and sugar into the Thermomix bowl and put a paper towel on top of the lid, but under the MC. Mill 20 sec/speed 8. Allow the dust to settle before proceeding.
Add the water and cook 5 min/100°C/speed 1. Blend 20 sec/speed 6. Strain into a jar with a pouring spout and either seal and keep in the fridge until use or proceed as below.
If you are making a hot latte, prep your coffee or brew choc as instructed and foam your milk as you like it. For a hot latte I suggest adding 1-2 tsp to the milk whilst foaming for a delicious result.
For an iced latte, place 1-2 tsp syrup per glass and top with ice, coffee or brew choc and finish with cold milk.
Sprinkle with a little cinnamon if you wish. Whipped cream is also decadent and impressive.
