Do

  1. Place ginger, lime leaves, chillies, garlic, prawns, turmeric, tamarind purée, oil and palm sugar into Thermo bowl and chop 4 sec/speed 6-7.

  2. Scrape down sides of bowl and sauté 4 min/Varoma/speed 1.

  3. Add coconut cream and cook 8 min/100°C/speed 1. (It is OK if the oil separates.)

  4. Add fish, fish sauce and lime juice and cook 9 min/100°C/Reverse + speed soft.

Serve with steamed rice.

Garnish with coriander and additional lime wedges and feel your heart breathe a sigh of relief….
