Place all pancake ingredients except cocoa into Thermomix bowl and blend 30 sec/ speed 10. Allow batter to rest 30 minutes if possible.
Remove a little of the batter and place into a glass bowl or similar and whisk the cocoa in with a balloon whisk until incorporated. Transfer to a squeezy bottle.
Heat a little oil plus some butter in a flat based frypan. Make sure the pan is hot but not smoking.
Play with patterns using the cocoa coloured batter and allow to cook until starting to 'seal'. Top with the scoops of regular batter and cook as you would any other pancake. Turn out, and voila, you have an art masterpiece! We do suggest adding a little water to the white batter, as it will spread better if it is a thinner batter, (ironically for Fat Tuesday).
Cook until bubbling through centre and browning on edges. Flip and just seal off top. Repeat until all batter is used.
Serve immediately drizzled Blueberry Dessert Sauce, and or pure maple syrup. Add other toppings of your choice, but definitely dust with some icing sugar before serving.
