Pre-make all the components well in advance of serving. It can then just be put together very quickly onto plates as needed.
For the cheesecake, place all ingredients into the Thermomix bowl and blend 20 sec/speed 6, stopping to scrape down sides of bowl as needed.
To assemble, rim the glasses you will serve the cheesecake in.
Sprinkle the base of the glasses with some of the biscuit crumb.
Pipe or dollop the cheesecake mixture on top. Garnish with the pomegranate jelly cubes and fresh pomegranate arils if you are using. Serve with a slice of lime.
