Tenina.com's Not Tinned Spaghetti

Need

Do

  1. Preheat oven to 200°C and line a baking tray with paper.

  2. Place tomatoes onto paper and sprinkle with salt, 2 tbsp of the sugar, balsamic vinegar and EVOO.

  3. Roast 15 minutes and switch oven off. Leave tomatoes in oven until cooled.

  4. Meanwhile place a little more EVOO, onions and garlic into Thermomix bowl and chop 4 sec/speed 6.

  5. Sauté 7 min/Varoma/speed 1.

  6. Add diced tinned tomatoes and roasted tomatoes. Cook 10 min/100°C/speed 1. Puree 10 sec/speed 6.

  7. Add water and alphabet pasta. Cook 6 min/100°C/Reverse/speed 2

  8. Serve on toast, or eat as it. You will be amazed at how much this tastes like good old fashioned tinned spaghetti! (Thus our title.)
