I love the dried cherries from Costco if you are looking and don't know where to start. They are really affordable and yummy by the handful on their own. If you cannot source them, go ahead and use craisins, which are more easily available in Australia. I am seeing fresh cherries all year round now, so the garnish was a given!
This is a bit special, so you probably shouldn't be serving it for breakfast, but then again, why not?

Need
- ½ Batches Chocolate Cherry Brioche cut into cubes Recipe
- 100 Grams dried cherries
- 60 Grams raw caster sugar BUY
- 4 eggs
- 2 egg yolks
- 150 Grams cream BUY
- 200 Grams whole milk BUY
- 60 Grams brandy
- 1 Teaspoon vanilla bean paste BUY
- chocolate cut into chunks BUY
- fresh cherries for garnish if available
- Ten Times sugar (icing sugar) for dusting Recipe

Preheat oven to 160°C. Butter 5–6 small ovenproof ceramic dishes.

Cube loaf and divide between prepared dishes.

Sprinkle cherries over and a little chocolate as well.

Place sugar into the Thermomix bowl and mill 10 sec/speed 10.

Pour over brioche making sure that the custard soaks into all of the pieces of bread.

Cook for 20–30 minutes until custard is set in centre.

Serve hot with ice-cream, or cream or custard.
