Shortbread Meets Art Class; A colourful, creative cookie for all ages!

If Jackson Pollock had a sweet tooth, (and who says he didn't?) this would be his masterpiece. These Abstract Art Cookies are buttery shortbread canvases ready for a splash of colour and creativity! Fun to make with the kids (or a cheeky glass of wine and some fixings for the adults), they’re the perfect edible gift or festive table showstopper. With easy decorating options that range from painterly icing to bold brushstrokes, nuts, to flowers, these cookies prove that baking really is an art form, deliciously so.

Make the cookies as per instructions, but instead of rolling into a sausage shape, roll the dough flat between 2 silpat mats and chill for 10 minutes.

Preheat oven to 160°C and line several cookie sheets with baking paper.

Slice into 5cm x 5cm squares using a pizza cutter, transfer to cookie sheets and chill again.

Bake exactly 14 minutes.

Cool completely before decorating.

To make the glaze, place icing sugar and a little lemon juice into the Thermomix bowl and mix 4 sec/speed 6. Add more juice and water as needed until you have a slurry that won't completely roll off the cookie when you pour it over.

Take a couple of spoonfuls out of the bowl and colour it very gently with lime green (or any colour of your choosing).

Colour the rest with pink, just enough to be seen when on the cookie.

Dip each cookie into the glaze, flip it up and return to the tray.

Decorate with rose petals and pistachios, then drizzle or flick with the green glaze...look at you all Jackson Pollack. The kids will love this part.

You could use any colours, more colours, freeze dried fruit, different nuts, and so on. The sky is the limit...your abstract art!

Store in the freezer in an airtight container until use.
