Hazelnut and Blue Cheese Shortbread
I cracker myself up sometimes...these are just what the doc ordered for a cheese platter or grazing table that needs something a little bit fancy schmancy when it comes to crackers. I do have a LOAD of cracker/flat bread recipes, you should really do a little search if you are in the market for such a thing. However, these are as good as any of them...and pretty good on their own just quietly.

Need
- 220 Grams flour
- 100 Grams roasted hazelnuts
- 140-160 Grams blue cheese
- 100 Grams butter cubed and frozen for 10 minutes BUY
- 2 egg yolks
- Freshly ground black pepper
- 1 Piece pink salt flakes BUY

Preheat oven to 200ºC.

Place all ingredients into Thermomix bowl and blend 10-15 sec/speed 6.

Place onto rectangle of baking paper and push dough together to form 2 sausage shaped rolls.

Wrap separately in baking paper and freeze for at least one hour before slicing into 30mm thin rounds and placing onto lined baking tray.

Bake for 15 minutes, or until golden and edges have crisped.
