Cheesey Loaded Potatoes
This mixture can easily be made into Loaded Oven Fries. Just get your Oven Fries organised and follow the toppings and meat accordingly. Very Fake Away, which by the way is the title of a FANTASTIC ebook that you should all be across. The Potatoes
- 4 large Nadine potatoes
- 1 medium onion, halved
- 4 garlic cloves
- 20 Grams Extra Virgin Olive Oil (EVOO) BUY
- 400 Grams beef mince (you can sub in chicken, lamb or pork mince here)
- 400 Grams diced tomatoes tinned
- 50 Grams tomato paste
- Salt, pepper to taste

The Rest;
- Grated or shredded cheeses of choice
- Sliced spring onions
- Smashed avocado
- Sour cream
- Chopped salad veggies of choice

Preheat the oven to 200°C and wrap each potato in aluminum foil.

Place onto a tray and bake 25-30 minutes until potatoes are cooked. Allow to cool slightly in the foil before unwrapping them.

Place onion, garlic, and oil into Thermomix bowl and chop 3 sec/speed 6. Sauté 5 min/Varoma/speed soft.

Add meat, tinned tomatoes and sauce and cook 20 min/90ºC/Reverse/speed soft.

Add seasoning to taste and stir through 10 sec/Reverse/speed soft. Allow to rest in Thermomix for at least 10 minutes (while you check on your potato status).

Split each potato and fill with the meat mixture, the spring onions and some cheese.

Return to the oven for around 15 minutes until the cheese has melted and everything is hot.

Top with all remaining ingredients, adding more cheese and spring onions if desired. Serve hot.
