We have been creating a lot of cocktail and mocktail recipes for our upcoming Twelve Cocktails/Mocktails of Christmas, and we are using a lot of ginger ale or ginger beer...so it was time to add in a fresh easy ginger ale recipe.
The difference between ginger ale and ginger beer is pretty simple; ginger ale is a ginger flavoured drink that is carbonated with soda or sparkling water. Ginger beer is a brewed drink, often non alcoholic, but it can also be alcoholic. It is usually a little bit stronger in ginger flavour than ginger ale. So there you have it in a nutshell.
We will create ginger beer one of these days too, but this is simple and quick and really great to have handy in your fridge for a mixer. Enjoy.

- 100 Grams fresh ginger scraped and chopped
- 700 Grams filtered water plus some more
- 200 Grams raw sugar
- 200 Grams fresh lemon juice
- Sparkling mineral water to taste BUY
- ice to taste
- limes and lemon slices to garnish
Place ginger into the Thermomix bowl and chop 3 sec/speed 5. Add the water and cook 8 min/80°C/Reverse/speed 1. Allow to infuse in the bowl until cooled.
Strain well and rinse the Thermomix bowl out. Return the mixture to the bowl and add sugar. Cook 4 min/80°C/speed 1. Cool before adding lemon juice. Keep this mixture in a sterilised jar in the fridge.
To serve, splash some ginger syrup into a glass over ice, top up with sparkling water and serve with lime and lemon slices.
