Mum's Lemonade
Lemonade, or lemon cordial is the perfect way to use up excess lemons. My mum used to make this one, and it is still something I make if I am lucky enough to have excess! Thanks to so many people this year, my lemon bowl overfloweth and so this recipe happened. Seriously. Tart lemon cordial that will keep in the fridge unopened for months.
Aside from being a delicious beverage, lemonade also provides vitamin C, derived from the lemon juice, making it a somewhat healthier option compared to many other sugary drinks on the market.
Get onto it kids. Serve with plenty of ice, extra lemon slices and dilute to taste with sparkling or tap water, vodka, or any other dilution liquid of choice!

Need
- 10-12 lemons
- 4 Litres water, plus some more
- 2 Cups sugar
- 4 Tablespoons citric acid
- sparkling mineral water to dilute BUY
- lemon slices and ice to serve
Do

Squeeze lemons and set juice aside.

Place lemon skins into a large pot and cover with water. Bring to boil and simmer for 30-40 minutes until the skins are soft. Cool completely. Squeeze skins and scrape out the remaining lemon from the skins. Discard skins.

Add sugar and bring to the boil until sugar is dissolved.

Add reserved juice and citric acid and stir to combine.

Dilute to taste and serve over ice.

Keep remaining syrup in the fridge until use.
