Marnee’s Lemon Slice
Who doesn’t love a good lemon slice?? Well almost no-one that we can think of. So when life gives you lemons, go and make lemon slice. This amazingly easy recipe is so simple the kids can do it! Don’t over think it, the crumb base, needs to be just that. Crumbs. Easy.

Crumb Base;
- 1 Cup plain flour
- Pinches pink salt flakes BUY
- 1/4 Cup golden caster sugar
- 1/4 Cup icing sugar
- 1 Tablespoon lemon zest finely grated
- OR 5 Drops doTERRA lemon oil BUY
- 115 Grams butter cut in pieces and well chilled BUY

Filling;
- 4 eggs
- 1 egg yolk
- 1/2 Cup lemon juice, freshly squeezed
- 3/4 Cups golden caster sugar
- 2 Tablespoons icing sugar, plus some more
- 1/4 Cup flour
- 1 Tablespoon lemon zest, finely grated
- 10 Drops doTERRA lemon oil BUY
- Pinches pink salt flakes BUY

Preheat oven to 160°C. Line a 19cm square tin with baking paper that comes up above the sides of tin for easy removal. Set aside.

Place all base ingredients into Thermomix bowl and blend 15 sec/speed 8. It should resemble sand. Add a few seconds if your butter is too cold.

Press into prepared tin and bake until just golden about 20 minutes.

Meanwhile, without washing, place the filling ingredients into Thermomix bowl and blend 30 sec/speed 10.

Pour onto warm base and return to the oven until edges are just browning and centre is wobbly around 15-20 minutes.

Cool slightly before dusting liberally with icing sugar.
