Classic Coconut Jam Slice Recipe – Easy Aussie Bake Everyone Loves

Preheat oven to 180°C. Line a slice tin with baking paper.

To make the base, place the flour, sugar, salt and butter into the Thermomix bowl. Combine 20 sec/speed 6. Add egg and vanilla. Mix 20 sec/speed 6. Scrape bowl, mix 10 sec/speed 6.

Press dough into prepared tin. Bake for 20 minutes or until browned.

Spread jam on the base while warm.

To make the coconut layer, place eggs, sugar, vanilla and salt in the Thermomix bowl. Whisk 2 min/Butterfly/speed 3. Remove butterfly and add coconut. Combine 10 sec/speed 3. Finish combining with spatula. Spread over the jam. Bake for 20 minutes or until just golden.

Cool in tin until cold. Slice into pieces.

This will keep in the pantry for at least a week and improves a little with age. Otherwise freeze in portion sizes and place frozen into lunchboxes for a fresh morning tea treat!
