‘Slim’ Noodles With Miso, Mushrooms And Chilli

I have a friend, a very slim friend, who works out twice a day most days, , and always tells me I need to do a low carb Thermomix cookbook…(any takers on that idea??) AND no, my very slim friend is not my inner thin person! She is a real person! She visits often, and I try to feed her my forbidden carb treats, of which there are a-plenty, as you may know by now! She told me about konjac pasta or Shirataki Noodles as they are known in Japanese cuisine…so in a quest for some low carb-ness on here, I did this recipe for lunch with such speed one day, that I just had to share it.

Delicious, speedy, AND low carb? Is it possible? Apparently yes!

Go and read up a little on Konjac here, which is what the branded ‘slim pasta’ is made from; there are some possible side effects to over indulgence, that may have you losing more weight than you intended as they are very high in fibre. BUT the good things about it are; low carb, gluten free, filling, zero calories, easy to prepare and delicious in that they take on any flavour you throw at them.

Need

  • 1 x 340 Gram pack of ‘Slim’ pasta (Konjac)
  • Boiling water to heat noodles
  • 1 clove of garlic
  • 1/2 red chilli
  • 1 spring onion/ shallot, sliced
  • 2 Tablespoons Miso paste
  • 20 Grams Extra Virgin Olive Oil (EVOO) BUY
  • 2 swiss brown mushrooms, sliced
  • 1 Handful coriander leaves
  • 1 Handful snow peas
  • 1/2 lime, juice
  • Tamari to taste

Do

Place noodles into insulated bowl and pour boiling water over. Set aside.

Place garlic, chilli, spring onion, Miso paste and oil into Thermomix bowl and chop 5 sec/speed 6.

Add mushrooms to bowl and saute for 6 min/Varoma/Reverse/speed soft. Stop as necessary to stir mushrooms if sticking to blades at all.

Drain noodles and add to Thermomix bowl. Add all remaining ingredients and stir through 20 sec/Reverse/speed soft. Serve.

Serve immediately. This will make 2 servings only. You should not double the mixture, but as it is so quick, just make a second batch as needed.
