Steamed Veggies With Feta And Lemon

When you have a load of veggies just begging to be used up, this should be your go to!

Add eggs, or salmon, chopped herbs, some toasted nuts or seeds or a generous grating of yummy cheese and the kids will polish these off in no time. Back in my college days, I would often just chop up a bunch of different vegetables, steam them, add cheese, some butter and that was dinner. I think it still works, and this is where this idea originated. You can use a steam oven if you have one, which is pretty tricky as you cannot really over steam veggies in a steam oven. Having said that, the colour of greens will still change the longer they are left in the heat.

Steaming the eggs with the veggies just makes it that much quicker and easier. Just wash the shells properly first. 

Serve this on its own or go ahead and add to any roast protein, as suggested below.

Gently combine dressing ingredients in attractive serving platter. Allow to marinate for at least an hour, preferably longer. You may need to add more oil before serving as the cheese will soak it up a bit, so make sure you use a delectable oil. Flavored EVOO is certainly another taste option.

To steam your veggies, prep and place into steaming tray of Combi-Steam oven and fill water reservoir. Add the washed eggs on top, if using. Steam for approximately 13 minutes, or until carrots are done to your liking. Remember the residual heat in the vegetables will continue to cook them for a few minutes after you have removed them and if you don't want soggy broccoli/broccolini, you are best to go with less time.

If you are using the Varoma, place 1L boiling water into the Thermomix bowl and arrange vegies (and eggs) into the Varoma dish and tray. Set Varoma into position. Steam 20 min/Varoma/speed 4, with the same advice as above.

Toss the vegetables in the dressing and arrange on the platter. Peel and quarter the eggs if you are using them. Add to the vegetables. Serve hot!
