Chicken Caesar Salad Crepes
Noone will judge you for having this for dinner. Definitely a fantastic brunch option, and of course, perfect for lunch. Easily assembled to order.
It is Fat Tuesday today, (the day of posting) otherwise known as Shrove Tuesday, Pancake Tuesday, plain old Pancake Day or even Carnival Day. I like all of them, but Fat Tuesday sticks with me for obvious reasons.
Almost every cuisine has some sort of pancake amongst its famous dishes; I really should do something about exploring more Pancakes from around the world. In my spare time of course.
This idea is a great way to eat pancakes all year round without any guilt at serving them for dinner.
You could sub in or out just about anything of course. Try salmon, avocado, blue cheese...I can think of so many option. What would you add to this dish? We'd love to know!

Need
- 1 Batch Basic Crepe Mix Cooked and ready to use Recipe
- 1 Batch Caesar Salad Dressing Recipe
- 1 Batch Shredded Chicken Recipe
- 300 Grams cooked bacon
- 6 poached eggs (1 per person)
- 2 tomatoes, cubed
- 2 Handfuls spinach leaves
- 50 Grams parmesan cheese shaved
Do

Make crepes as per recipe.

Make Caesar Salad Dressing as per recipe.

Assemble crepes by placing all the toppings on top of each crepe and drizzle with the dressing. Of course you can add avocado, or other non traditional ingredients of your choice.
