Very Lime Cookies
We are a little obsessed with these cookies They sort of taste like fruit loops, if you are woman enough to admit ever eating that cereal Do you agree
We think these taste like fruit loops. Yep, you know that brightly hued 'breakfast cereal' that really shouldn't be eaten by anyone? (Go on, admit it, you loved fruit loops as a kid am I right?) Anyway, no additives, and curiously similar to the taste of fruit loops in a healthy citrusy way.
We do recommend the use of a microplane for this job, as using your Thermomix to finely grate that much zest is a recipe for disaster. Plus it is kind of an upper arm work out, which means you can have an extra cookie for your labours. Please enjoy, we are pretty sure you will.

Need
- 220 Grams butter BUY
- 400 Grams sugar
- 1 eggs
- 1 Teaspoon vanilla bean paste BUY
- 10 limes, zest only
- 2 oranges, zest only
- 300 Grams plain flour
- 1/2 Teaspoon baking powder
- 1/2 Teaspoon baking soda

Preheat oven to 180°C.
- 2
Line 3 baking trays with baking paper and set aside

Place the butter and sugar into the Thermomix bowl and mix 30 sec/speed 7 or until combined.

Scrape bowl and mix 2 min/Butterfly/speed 3
- 5
Add egg and vanilla and mix 20 sec/Butterfly/speed 3 Remove butterfly.

Add the lime and orange zest and combine 20 sec/speed 4.

Add remaining ingredients and mix 30 sec/interval/dough setting.

Finish combing with a spatula.

Tip out cookie dough onto silpat mat and roll into 2 logs. Wrap up in cling wrap and refrigerate for 1 hour.

Roll cookie dough into small, walnut size balls and place on to prepared trays, leaving space in between each cookie.

Place into oven.

Bake for 12 minutes or until just browning on edges.
