Chocolate Marzipan Friands
I have always loved marzipan at Christmas time. Even as a kid...which kind of makes me weird I’m pretty sure as most kids hate marzipan. My mum used to make cute little marzipan fruits and veggies and I just couldn’t resist them, so I guess that is how come I loved it from the beginning. As I have gotten older, I really now love the more bitter almond marzipan and of course I am not afraid to make it myself. So it’s up to you...for this one you can buy it or make it. Home made is quite the revelation flavour wise. Either way, these gluten free goodies are sure to be a hit at yours on any Christmixy occasion!

Need
- 200 Grams blanched almonds
- 200 Grams golden caster sugar
- 2 Teaspoons ground cinnamon
- 50 Grams chocolate cocoa BUY
- ½ Teaspoons almond essence
- 2 Teaspoons vanilla bean paste BUY
- Pinches pink salt flakes BUY
- 5 egg whites
- 150 Grams unsalted butter melted BUY
- 75 Grams Marzipan cubed Recipe

Line 12-hole friand or muffin tin with silicone or paper liners.

Place almonds onto lined tray and into cold oven set to 200°C for exactly 10 minutes. Remove and cool slightly. Leave oven temp at 200°C.

Place toasted almonds, sugar, cinnamon and cocoa into Thermomix bowl and mill 20 sec/speed 10.

Add almond essence, vanilla, salt and egg whites and blend 20 sec/ speed 8.

Add melted butter through hole in lid as you blend 20 sec/speed 8.

Divide mixture between prepared holes and push a few pieces of cubed marzipan into the centre of batter.

Bake 15 minutes until risen and fragrant, dust with icing sugar or cocoa. Serve warm or cold.
