Kefir Marble Cake
A beautifully swirled chocolate and vanilla kefir cake that’s moist, gut-friendly, and deceptively easy to make.
If you’ve been fermenting along with my Gut Instinct protocol course, you already know kefir isn’t just for smoothies. This Chocolate Marbled Kefir Cake proves that fermented foods can be both good for your gut and gorgeous on the table. Light, tender, and marbled with rich chocolate swirls, it’s the kind of cake that looks like you’ve fussed for hours, when in fact, it’s surprisingly simple. The kefir keeps the crumb moist, adds a delicate tang, and brings all those beneficial bacteria to the party. Whether you’re serving it with afternoon tea, or just slicing into it for a midweek treat, this is fermented baking at its prettiest (and tastiest).
(And it's kind of fun cutting into it for the first time, because you not quite sure what you're going to get!)

The Cake
- 250 Grams butter soft and cubed BUY
- 300 Grams caster sugar
- 3 eggs at room temperature
- 300 Grams bakers or strong flour BUY
- 1 Teaspoon bicarb soda
- 1 Teaspoon baking powder
- Pinches pink salt flakes BUY
- 1 Teaspoon vanilla bean paste BUY
- 250 Grams kefir, room temperature
- 2 Tablespoons cocoa powder BUY

The Frosting
- 1 Batch Ermine Frosting (chocolate version) Recipe

Preheat oven to 160°C. Grease and line a 10 inch cake tin.

Place butter and sugar into the Thermomix bowl. Combine 10 sec/speed 6 or until combined. Insert Butterfly and whip 2 min/Butterfly/speed 4.

Add eggs and continue whipping 1 min/Butterfly/speed 4.

Sift the flour, bicarb soda and baking powder into the Thermomix bowl. Add salt and vanilla. Combine 10 sec/Butterfly/Interval

Add Kefir and combine 10 sec/Butterfly/dough setting/Interval.

Pour out half of the batter. Add the cocoa to the Thermomix bowl and combine 10 sec/Butterfly/dough setting/Interval.

Dollop batter into cake tin. Alternating choc and vanilla to create a fun pattern. Bake for 50 minutes - 1 hour.

Cool in tin for 20 minutes, then turn out onto a wire rack. Cool.

We frosted this with Chocolate Ermine Frosting, but you can use any frosting you like. I have linked a few options below.
