Okonomiyaki, often referred to as a Japanese savoury pancake or Japanese pizza, is a beloved dish that originated in Osaka, Japan. This versatile pancake, whose name means 'grilled as you like it,' allows for a variety of ingredients, including cabbage, seafood, pork belly, and more. Traditionally cooked on a teppan (a flat griddle), Okonomiyaki showcases the ingenuity of Japanese street food culture. Whether enjoyed at a local festival or a specialty restaurant, this dish remains a staple in Japanese cuisine, celebrated for its rich flavors and customisable nature. I have eaten this a few times from food trucks, I am yet to actually visit Japan (other than the airport!) and taste all the amazing food...what say you, a foodie trip? I think so.

To make the pancake, place eggs, flour, salt, soy sauce and sesame oil into the Thermomix bowl and combine 20 sec/speed 6.

Add the spring onions and cabbage and chop 5 sec/speed 5.

Heat enough oil to cover the bottom of a fry pan over a medium heat. Spoon 1/4 of batter into the pan and fry until golden brown on each side. This should be quite a thick pancake when finished. Fry in batches until you've used up all the batter.

To make the sauce, place all ingredients into the Thermomix bowl and combine 6 sec/speed 6.

Serve the Okonomiyaki pancakes with a drizzle of the sauce and spring onions. Serve with Kewpie mayonnaise, pickled ginger on the side and bonito flakes, shredded nori on top.
