Sheet Pan Chicken Meatballs and Charred Broccolini

We often find as Thermomix peeps, we don't really do this kind of simple easy cooking because we are more focussed on using our wonderful appliance, but this still uses your Thermo and of course, if you are serving this with rice, you'll use it again for that. We are all about simplifying and delishifying your life right now.

The Broccolini
- 2 Bunches broccolini
- 2 Tablespoons Extra Virgin Olive Oil (EVOO) BUY
- 1 Pinch pink salt flakes BUY
- 1/2 Teaspoon dried red chilli flakes

The Sauce
- 10 Grams fresh ginger
- 120 Grams tomato ketchup
- 25 Grams Worcestershire sauce
- 10 Grams rice wine vinegar
- 25 Grams honey
- 1 Teaspoon soy sauce
- black pepper ground, to taste

The Meatballs
- 4 spring onions, cleaned and chopped
- 3 cloves garlic
- 10 Grams fresh ginger
- 500 Grams chicken mince
- 1 egg
- 100 Grams panko breadcrumbs
- 1 Tablespoon sesame oil
- pink salt flakes and pepper to taste BUY
- 1 Tablespoon sesame seeds, lightly toasted

Preheat oven to 220°C. Line an oven tray with baking paper.

Trim broccolini and place on the oven tray. Drizzle with EVOO, pinch of salt and chilli flakes. Mix gently with your hands to coat the broccolini well.

To make the sauce, place ginger into the Thermomix bowl and chop 5 sec/speed 5. Add remaining ingredients and combine 10 sec/speed 5. Cook 6 min/100°C/speed soft/MC off. Remove from bowl and set aside.

Without cleaning the bowl, make the meatballs. Place spring onions, garlic and ginger into the Thermomix bowl, chop 5 sec/speed 6. Add remaining ingredients except sesame seeds and combine 10 sec/speed 6. Scrape bowl and repeat.

Using wet hands, form mixture into balls and place on the oven tray with the broccolini. Brush meatballs with some of the sauce. Bake for 15 minutes. Remove from oven, brush meatballs with more sauce and return to oven on grill setting for 5 minutes or until broccolini has charred slightly and meatballs are cooked through.

Serve with as much remaining sauce as desired and sprinkle with sesame seeds.
