This is an oldie but a goldie from waaaay back in my Thermomix in Australia days. It appeared in one of the calenders I did for them. Sort of. The version is tweaked in that we have a different crepe recipe and a different pesto recipe, but the idea is the same. So same same, but different. Either way, you can change it up with shredded cheese, ham, salmon, different spreads other than a green pesto. Use any dip of choice. Totally delicious. Make crepes and set aside.

Make pesto as directed, then add cream cheese to Thermomix bowl with the pesto. Mix 10 sec/speed 7.

Whilst still warm, layer crepes with pesto mixture into a spring form cake tin approximately the same diameter as your crepe pan. Press down firmly, refrigerate with a weight on top until completely cold and serve in wedges with fresh salad.

Vary this recipe with any flavours of choice: try tuna or salmon dip, sundried tomatoes, add shaved ham or prosciutto, smoked salmon and capers, olives, grated cheese of choice, roasted zucchini, eggplant or pumpkin in layers. Garnish with fresh herbs to taste.
