Make the pasta according to recipe directions and cut it into tagliatelle strips.

Bring salted water to the boil and cook pasta for a few minutes until softened. (If using homemade pasta, this will literally be a maximum of 4 minutes.)

Meanwhile, saute the mushrooms in a little of the truffle butter. Add cooked pasta, the remaining truffle butter and toss to combine.

Divide between serving plates and finish with shaved truffle, the grated parmesan and thyme if using. Serve immediately.
