Sophie's Focaccia
I do love a good chunk of focaccia and when you see in the video how Sophie serves it with a cheese like slab of butter, you will know that I met my match on this shoot for the Insider Club.

Need
- 520 Grams lukewarm water
- 3 Teaspoons dry yeast
- 650 Grams bakers or strong flour
- 1 Tablespoon pink salt flakes plus extra for on top BUY
- 2 Tablespoons Extra Virgin Olive Oil (EVOO) plus extra for on top BUY
- fresh rosemary

Place water, yeast, flour, salt and EVOO into the Thermomix bowl. Combine 10 sec/speed 6. Knead 1 min/Interval.

Tip out into a large oiled bowl. Cover and let rise. It is meant to be a sticky dough.

Drizzle some EVOO on a baking tray and sprinkle flour on top. Tip dough on to tray and sprinkle with flour. Push dough out to roughly 1" thick. Cover with a dry tee towel and let rise again.

Preheat oven to 200.

Drizzle with EVOO and gently rub it over the dough. Scatter rosemary leaves and salt on top.

Bake for 20-25 minutes, until the middle sounds hollow when tapped.
