From my good old Yorkshire dad, we use variations of this batter recipe throughout this site and my other works. This is the best!

I have so many variations of the Yorkshire batter recipe on here, but not really a good old fashioned Toad in the Hole.

Basic Crepe, Popover, Yorkshire Pudding Batter

Jam Popovers

to name a few. Go and have fun with this recipe kids. You will just love the huge rise you get out of these, with nothing but eggs and time as a raising agent.

Remember, hot hot fat. Hot hot oven and cold cold batter.

Preheat oven to 250 or as hot as it goes. Grease muffin tins with duck fat.

Make Basic Crepe Batter and set aside.

Skin the sausages and discard skin. Add salt and roughly mix with a fork.

4  

Roll sausage mince into balls and place in prepared muffin tins. Cook for 15 minutes.

5  

Working quickly, pour crepe batter over sausage balls, then a sprinkle of salt. Return to oven for a further 15 minutes.
