Need
- 800 Grams sweet potato, peeled and cubed
- 500 Grams water
- Pinches pink salt flakes BUY
- 40 Grams butter BUY
- 40 Grams sour cream plus extra to serve
- pink salt flakes and pepper to taste BUY
- a few snipped chives for garnish (optional)

Place sweet potato, water and salt into the Thermomix bowl. Cook 18 min/Varoma/reverse/speed 1.

Drain the water. Insert Butterfly. Add remaining ingredients and whip 20 sec/Butterfly/speed 3.

Serve with a dollop of sour cream and snipped chives with any dishes of your choice!
