Jollof Rice
African rice to accompany any dish, but you could just eat it by itself as it is very hearty and delish.
I don't think there is a cuisine in the world that doesn't eat some sort of rice as a staple dish to accompany other dishes. This is one such West African dish and we did love it. You can add meat directly into this dish, and make it the whole meal, add plenty of green leafy herbs and you're done! Too easy.
Alternatively, make it to serve with our very amazing North African Curry Chicken just to get all of Africa involved! (Well, not all, but you know what I mean!)

Need
- 2 brown onion peeled and quartered
- 3 cloves garlic
- 20 Grams fresh ginger
- 2 red chilli roughly chopped
- 20 Grams Extra Virgin Olive Oil (EVOO) BUY
- 150 Grams cherry tomatoes. quartered
- 1 Teaspoon dried thyme (or fresh)
- 1/2 Teaspoon cayenne pepper
- 250 Grams tomato puree
- 50 Grams tomato paste
- 500 Grams liquid chicken stock
- 400 Grams basmati rice
Do

Place onion, garlic, ginger, chilli and EVOO into the Thermomix bowl and chop 5 sec/speed 6. Cook 5 min/Varoma/speed 1/MC off.

Add all remaining ingredients, except rice and cook 20 min/100°C/speed 2.

Add rice and stir to combine with spatula and cook 14 min/100°C/Reverse/speed 1.5 or until rice is fully cooked.
