When you need baked potatoes without taking room in the oven, get the AirFryer on the job. These are beautifully fluffy in the middle, crispy outside! We are loving the AirFryer in the test kitchen, so much so we are doing a cookbook. There are so many uses for them, it is really a small oven that fits on your bench. I can imagine them being very useful for travellers...grey nomads, not that anyone can do that sort of thing just now. Still, we can dream can't we?

Need
- 4 potatoes, cleaned and dried
- Extra Virgin Olive Oil (EVOO) as needed BUY
- 1 Pinch pink salt flakes BUY
- 2 spring onion, sliced thinly
- 1 Tablespoon sour cream or to taste
- butter to taste BUY
Do

Preheat Air Fryer to 200°C.
- 2
Pierce potatoes a few times with a knife. Rub in oil and sprinkle with salt.

Place in the Air Fryer and cook for 20 minutes. Turn potatoes over and cook for a further 20 minutes.

Serve with spring onions and a dollop of sour cream and/or butter.
