I love nut butters of all descriptions but I am a real fan of almonds in all the ways they come, so hello almond butter. It took a while, but we see you there!

Pass the roasted, salted almonds when in front of the telly and I am a happy girl. The good thing is that almonds are a really fantastic food for good health. If this nut butter doesn't come together easily you will need to check on how old your almonds are or whether they are from a good source.

Almonds contain lots of healthy fats, fibre protein, magnesium and vitamin E.

The health benefits of almonds include lower blood sugar levels, reduced blood pressure and lower cholesterol levels. They can also reduce hunger and promote weight loss. Vitamin E is anti aging...there, I got you on board didn't I?

All things considered, almonds are as close to perfect as a food can get.

Slather this on pancakes, waffles, toasted sourdough, eat it with a spoon...or swirl it through ice cream. Now what was I saying about it being really healthy?

Place almonds onto a lined tray and into a cold oven set to 180°C. Roast for 15 minutes until all the nuts are well toasted and golden.

Place the still hot almonds into the Thermomix bowl with all the remaining ingredients and blend until smooth. (Approx 40 sec/speed 8.) Don't over blend as this will cause separation which is not good.

Store in sterilised jar until use.
