Langues de Chat Dessert Biscuits
Literally translated as ‘cats tongues’ these very delicate morsels are quite delicious on their own but go really well with any creamy dessert. Think Panna Cotta, think custards or light and airy things. (Of which I don’t have that many on here TBH.)
I love them on their own as quite an elegant accompaniment to a little Crio Bru. You can feel spoilt without being spoilt. Anyway, get on with it. Cats tongues to go around! (But call them the proper name, they sound so much more, well, erudite.)

Need
- 45 Grams golden caster sugar
- 1 lemon or orange, zest only
- 45 Grams butter BUY
- 1 Teaspoon vanilla bean paste BUY
- 2 large egg whites
- Pinches pink salt flakes BUY
- 55 Grams plain flour

Preheat oven to 170ºC. Line two baking trays with paper and set aside.

Place sugar and zest into Thermomix bowl and mill 10 sec/speed 8.

Scrape sides of bowl and add butter. Mix 3 sec/speed 5.

Whip 8 sec/Butterfly/speed 3. Remove Butterfly.

Add remaining ingredients and mix 6 sec/speed 4. Scrape down and repeat if necessary.

Place mixture into piping bag with 1cm plain round tip. Pipe biscuits onto prepared trays, about 5cm each in length and with 2-3cm length and width between biscuits.

Bake for 10 minutes until golden around the edges. Transfer to cooling tray. Biscuits should be crisp and wafer like. Store in airtight container until serving.
