Lemon Madeleines with Lavender Sugar

Delicate French madeleines infused with zesty lemon and finished with fragrant lavender sugar, a perfect teatime treat from your Thermomix.

These pillowy lemon madeleines are an elegant take on the classic French sponge. Light, buttery and gently infused with citrus, they’re taken up a notch with a dusting of homemade lavender sugar that adds a floral finish without being overpowering. Ideal for afternoon tea, pretty dessert platters, baby showers or gifting during the festive season.

Serve them with a cup of Earl Grey, a scoop of lemon sorbet, or pair with mascarpone and berries for a plated dessert. They also make a gorgeous addition to a high tea spread or a thoughtful edible gift.

Preheat oven to 220°C and grease 2 madeleine trays with butter.

Place eggs, sugars and salt in the Thermomix bowl. Whip 4 min/Butterfly/speed 3. Pour into a large bowl. Add zest and lemon oil.

Sift the flour and baking powder over the egg mixture. Add melted butter and stir through gently.

Cover with cling wrap and set aside at room temperature for 20 minutes.

Spoon batter into Madeleine trays. Bake for 4-5 minutes until just starting to brown.

To make the sugar, place all ingredients in the Thermomix bowl and mill 10 sec/speed 10.

7  

Roll the slightly cooled Madeleines in the lavender sugar.
