Fresh Lemon Granita
Fresh, lemony and icy cold, the perfect granita does exist!

Need
- 500 Grams lemons
- 150 Grams white sugar
- 150 Grams water
- 20 Drops doTERRA lemon oil BUY
- 80 Grams coconut cream or cream, chilled (optional) Recipe

Twenty four hours before serving; Zest the lemons finely and add to a ziploc bag. Peel the lemons, removing as much of the pith as you can, and place all the lemon flesh into the same bag as the zest. Freeze.

Make a sugar syrup by placing sugar and water into the Thermomix bowl and cooking 10 min/100°C/speed 1. Add the lemon oil and stir through. Transfer to a sterilised jar to chill until use. You will only need 80g of this syrup for one batch.

When you are ready to serve the granita, place the frozen lemons, 80g of the syrup and the coconut milk into the Thermomix bowl and blend speed 10 until it comes together. Depending on the juiciness of your lemons, you may add more coconut milk, more syrup as required.

Taste and add more sweetness if you wish.

Serve scooped into small lemon skins immediately or in glasses with a straw.
