Pineapple Tart Tatin
A spiced and somewhat tropical take on the classic French tart, with juicy pineapple and golden caramel.
Give the traditional tarte tatin a spiced, tropical twist with this stunning pineapple version. Juicy pineapple slices are gently caramelised before being baked beneath a layer of crisp, golden pastry, then flipped for that dramatic French flair. This dessert is simple yet show-stopping, perfect for dinner parties or when you want to turn a humble fruit into something spectacular. Serve warm with a scoop of coconut gelato or a drizzle of cream.

Pumpkin and Red Onion Tarte Tatin

Need
- 1 Batch Puff Pastry ready to go Recipe
- 200 Grams dark brown sugar
- 100 Grams butter cubed BUY
- a dash rum or brandy, (optional)
- 1 vanilla bean split in half lengthways BUY
- 4-5 star anise
- 1 pineapple, peeled, cored, cut into pieces

Preheat the oven to 200°C/395°F fan forced.

Place the sugar and butter into a cast iron skillet over a medium high heat and melt together until combined. Add the alcohol if using.

Place the vanilla bean, and star anise on top of the caramel, and arrange the pineapple pieces on top of all that. Whatever that all looks like now is how it will look when turned out, so take your time.

Cook the pineapple down until it is starting to soften. Cool slightly so you can work easily.

Roll the pastry out and tuck it around the fruit, being sure to seal the edges as best as you can. Cut 2 big slits across the pastry, but not all the way through to the pineapple.

Place into the oven for 20-25 minutes until the pastry is puffed and golden.

Turn the entire thing upside down onto a serving platter as quickly as possible while everything is still hot. This should prevent sticking.

Serve immediately with ice cream or cream!
