Salted Caramel Brazil Nut Milk

I don't mind saying, that this is as good as it gets. It's good for you, raw, quick and easy (bar the soaking) and completely delish. Bring on a healthy start to Christmas morning with this in abundance. YUM. What is it about salted caramel??

Place nuts and dates into a bowl and cover with 2 cups water and soak several hours or overnight. Drain nuts and place into Thermomix bowl.


Add enough water to reach the 1L line inside the bowl.


Blend 2 min/speed 8.


Strain through nut milk bag and return milk to the Thermomix bowl. Reserve nut pulp for another recipe.


Add all remaining ingredients to Thermomix bowl and blend 20–30 sec/speed 10. Check that the dates are well blended and repeat if necessary.


Chill milk before serving.
