Coconut Tamarind Jamu Jamu
It is time to jamu....don't you agree? I love the options available once you get the jamu bug. Get all your healthy ingredients out and begin your mixology. It is a lot of fun. Just make sure you have ginger in the mix somewhere. Turmeric is also very popular, but doesn't appear in this recipe. This is a creamy one, and we loved it. It was very different to the others.

- 1 young coconut, flesh and water
- 50 Grams Fresh Ginger
- 2 heaped Tablespoons tamarind paste
- 40 Grams Coconut Sugar
- 1 Lemon juice only
- 1 lime, juice only
- 400 Milliliters Coconut Milk
- 1/2 Cinnamon Stick(s)
- 2 cloves
Place coconut flesh and ginger into the Thermomix bowl and chop 5 sec/speed 5.
Add coconut water and tamarind paste, plus more water if your coconut didn't have a lot of water. Blend 5 sec/speed 5.
Leave to infuse for at least 30 minutes.
Strain out solids through nut milk bag. Return liquid to clean Thermomix bowl.
Add sugar, juices and coconut milk and blend 10 sec/speed 8.
Add spices and leave in the jar to infuse.
Dilute to taste with water, spring water, sparkling water.
