A TA rating on honey refers to the Total Activity rating, a measure of its antibacterial properties. The higher the TA number, the higher the strength of the antibacterial and health benefits, making it a valuable choice for both culinary and medicinal purposes.

Need

  • The Honey Syrup
  • 200 Grams honey BUY
  • 50 Grams water
  • The Bee's Knees
  • ice
  • 60 Milliliters The Honey Syrup
  • 60 Milliliters lemon juice (save the peel for garnish)
  • 60 Milliliters Gin

Do

To make the honey syrup, place honey and water into the Thermomix bowl. Warm 5 min/37°C/speed 2.

Pour into a jar and until use.

To make the cocktail, fill a cocktail shaker with ice. Pour in the honey syrup, lemon juice and gin. Securely fasten the lid and shake until the mixture is very cold, about 30 seconds.

Strain the drink into a martini glass. Twist the lemon peel over the cocktail to release some of its oils, then drop it in. Enjoy while cold.
