Sweet Potato Mash with Brussels Sprouts and Peas
So you have the meat bit sorted but you need a quick three veg? This is it! Cue the gravy (or jus)! We served this with the Roasted Beef with Red Wine Jus and Veggies and I think you will find if you do that AND the Yorkshire Puddings you are going to have one happy family dinner.
Of course you can just use this recipe entirely on it's own and cook up any protein of choice to go with. Meat and three veg, sorted!

Need
- 600 Grams approx sweet potato, peeled and cubed
- 350 Grams water
- pink salt flakes to taste BUY
- 40 Grams butter BUY
- 40 Grams cream BUY
- 3 Drops doTERRA Oils black pepper oil BUY
- 200 Grams brussels sprouts
- 200 Grams frozen peas
Do

Place sweet potato and water into the Thermomix bowl.

Place brussels sprouts in the Varoma dish and set in place. Cook 12 min/Varoma/speed 1.

Add peas to the Varoma dish and continue cooking 3 min/Varoma/speed 1.

Drain the excess water from the Thermomix bowl and add salt, butter, cream and pepper oil. Whip 30 sec/speed 4.

Leave in the Thermomix bowl with the Varoma still in position until you are ready to serve.
