The Best Basic Mashed Potatoes (with Options to Level Them Up!)

I find it hard to pass up on a plate of steaming mash with a few trimmings. If you are trying to de carb, use the cauliflower mash, totally carb free! You must not mash until you know for sure the potatoes are fully cooked. The drier they are, the better they will mash as well…so cold potatoes will mash the best. Dry them out in the fridge overnight if you are that organised, (and then you have to heat them up again!) but really, can anyone wait that long? Not me. 

I know that potato mash was one of the first things I tried when I got my Thermomix 31 and I have to say the recipe was pretty awful because I ended up with a gluey mess, which I ultimately tossed out. I had heard so much about the mashed potato recipe that of course that was number one on the list. I am still not a huge fan of the official Thermie version, and if you find yourself in that camp, by all means, try this one and be converted! 

You could use the Butterfly after the whole recipe has been made if you really wanted that fluffy finish. Just remember, don't go above speed 4!

 

Need

  • 800g-1 Kilo potatoes cubed (peeling is optional)
  • water as needed
  • 40 Grams cream BUY
  • seasoning to taste

Place prepared potatoes into steamer dish. Pour enough water to reach 1L mark inside bowl and set steamer into position.

Cook 35 min/100°C/speed 4. Check that potatoes are cooked by pushing with a back of a fork. If they do not crumble under very slight pressure, add cooking time, 10 min/100°C/speed 4 and test again. Repeat until completely cooked.

Remove basket and drain bowl.

Tip potatoes into Thermomix bowl and add cream and seasoning. Blend 10 sec/speed 6.

Serve.

Smoked Salmon and Chives Mash

Stir through 200g smoked salmon and snipped chives just before serving.

Confit Garlic Mash

Add a few cloves of Confit Garlic when mashing. Drizzle with EVOO to serve.

Confetti Mash

Stir though diced red, yellow and green capsicum and 1 sliced spring onion. Top with grated tasty cheese to serve.

Sweet Potato Mash

Substitute sweet potato for normal potato.

Cauliflower Mash

Substitute cauliflower for potato, but reduce cooking time to 20 minutes.
