Black Halloween Cupcakes
When Halloween beckons, it is kind of the best excuse to make cake! In crazy colours of course. These cupcakes will have you reaching for another!
Yes my pretties, it is that time of year again, when children's thoughts turn to dressing up in order to get as much free candy as they can.
Boo to the peeps who hand out healthy treats or pretend they're not home. Australia has really gotten on board with this thing in recent years and I have to say I have managed to avoid it most of my life, but since having an American daughter in law and for her, this holiday is her most favourite. Of course, in the states, it actually marks the beginning of ALL the holidays. November is Thanksgiving and from then on it is a non stop train ride to Christmas. There is something magical for me about American holidays as well, I remember going shopping late on Thanksgiving night and finding all the shops had magically turned into Christmas wonderlands.
But I digress!! Get your laughing gear around these delicious cupcakes from our baking queen, and you will be on board with the Halloween spirit in no time. Happy Halloween!

The cupcakes
- 300 Grams bakers or strong flour
- 2 Teaspoons baking powder
- 350 Grams raw caster sugar BUY
- 200 Grams butter soft BUY
- 4 Eggs, room temperature
- 1 Teaspoon vanilla bean paste BUY
- 1 Pinch pink salt flakes BUY
- 50 Grams cocoa powder BUY
- 1 Tablespoon activated charcoal powder
- Black food colouring, optional
- 250 Grams whole milk BUY
- 2 Batches Ermine Frosting Recipe
- Food colouring, as desired
- candy eyeballs, spooky sprinkles as desired

Preheat oven to 170° and line 24 large cupcake tins with paper cases.

Place flour and baking powder into the Thermomix bowl, combine 10 sec/speed 10 to sift. Set aside

Place sugar into the Thermomix bowl and mill 10 sec/speed 10 scrape bowl

Add butter and chop 20 sec/speed 5 this will take longer if the butter is cold. It needs to be fully combined before inserting the butterfly

Insert butterfly and whip 90 sec/speed 3 scrape bowl

Add eggs 1 at a time 30 sec/speed 3

Add vanilla and salt and combine 6 sec/speed 3 scrape bowl

Add cocoa powder, activated charcoal and black food colouring, if using and combine 10 sec/speed 3 scrape bowl

Add a third of the flour mix, combine 8 sec/ speed 3 scrape bowl. Add half of the milk (125 grams) 8 sec/speed 3 scrape bowl.

Add another third of the flour mix, combine 8 sec/ speed 3 scrape bowl. Add remaining milk (125 grams) 8 sec/speed 3 scrape bowl. Add the remaining flour and mix 6 sec/speed 3

Finishing combining with a spatula

Fill paper cases 3/4 of the way and bake 15-18 minutes, or until slightly browned and bounce back when touched. Cool

Make the ermine frosting, adding food colouring at the end, if using. Ice and decorate your cupcakes as you wish for your halloween theme

Best served at room temperature, but store in the fridge
